Sweet Potato Chips (Fries)

These are simple to make. Sweet potatos are great for a healthy dose of fibre and also contain beta carotene, a pre-cursor of vitamin A and manganese.


You will need sweet potatos. Most of the time i leave the peel on and give them a good wash first but you can peel them if you wish. Cut the sweet potato in chip/french fry sized pieces.


Place in a baking tray/roasting tin drizzled in olive oil and sprinkled with herbs and/or spices. Rosemary or an Italian herb mix works well as does paprika.


Roast on 180 deg C for about half an hour.


These are great served with hummous or another type of dip. They also go really well with curried mayonnaise and make an excellent accompaniment to a bowl of soup.
