Gomashio

Gomashio is used in Japanese cooking and is basically a mix of sea salt and sesame seeds that has a savoury taste and can be added to dishes for extra flavour.


Ingredients


Sea Salt - 1 teaspoon

Sesame seeds - 6 tablespoons


Method

You take 1 tspn salt, dry heat it in a frying pan (skillet) so it goes brown.

Grind that down with a pestle and mortar.

Then take 18 tspns of sesame seeds (which is 3 tspns to a tbspn I believe - 6 tbspns) and dry toast them in the frying pan too until they brown and smell really nutty.

Grind them down too and mix with the salt.

Et voila these are ready and can be sprinkled onto stir fries, soups and stews. It brings a salty and nutty flavour.
